In the words of google we "May not promote sites displaying ads through unsolicited mass emails or unwanted advertisements on third-party websites". But what if we put adsense in signature of our emails. We would just keep in mind not to send spammy mail to many people. Would that still be violation of G terms?

Dude you have TOTALLY misread what google have said.

Unless you want your account closed, email Google and tell them what you intend. They will then tell you no, and you can get on with building sites.

section 5 of prohibited use says adsense can not be displayed in any email.

You can not put adsense ads on email and you can not spam to promote your site . it against adsense TOS . But still you can promote your site via mails .
